“White” spirits are clear, generally devoid of color, because they have usually not been aged in color-inducing wooden barrels. Sure, some of them are aged in barrels and then filtered so they look clear (like one very famous rum brand).

One of the biggest examples of a liquor available either clear (white) or in various shades of golden or dark brown, has to be rum. The differences are age, storage medium (stainless steel vs. charred barrels), and added colors (caramel and/or molasses).

When you see a spirit that's brown, it's because that liquor has spent time aging in the presence of wood — generally (and potentially exclusively) in the form of a barrel. Now, here's where it gets more detailed: the charred wood of a barrel imparts color and flavor to the spirit resting within.
